Cajun / Creole Seasoning is used interchangeably in most recipes. But after talking to a lot of people and a ton of reading it seems that Cajun seasoning just has cayenne pepper, garlic powder, onion powder, and black pepper. Where Creole seasoning adds things like paprika, oregano, and thyme. Every recipe for both Cajun and Creole seasoning has different percentages of each, but they are relatively the same. I add white pepper, mainly because I love it. I also use a spice grinder to get a uniform size. It seems to settle less in my shaker.
This can be used in so many ways. Cajun Chicken, Cajun Shrimp, gravy's.. anything up to and including a flip flop. It makes everything taste better.
