Bolognese Sauce

Bolognese Sauce

Its a way of making (forgive me) an Italian meat sauce. It typically has onion, garlic, carrots, and finely diced celery slow sauteed in butter (or bacon fat).

Ingredients

Step 1

  • 1 tablespoon olive oil
  • 2 tablespoon unsalted butter
  • ½ cup yellow onion ¼" diced
  • ⅔ cup carrots finely shredded
  • ⅔ cup celery ¼" diced
  • 2 tablespoon garlic ⅛" diced

Step 2

  • 1 lbs ground beef 80/20
  • ½ lbs Italian sausage

Step 3

  • 2 teaspoon Dried oregano
  • 1 teaspoon Black pepper
  • 1 cup dry white wine
  • 8 oz tomato paste
  • 1 teaspoon Kosher Salt

Step 4

  • 1 cup cream
  • 27 oz whole tomatoes
  • 27 oz tomato sauce
  • 2 tablespoon Thai fish sauce such as Red Boat (it doesn't add a fish taest)

Instructions

Step 1

  • Add oil and butter to pot when melted all other ingredients n step 1 and cook over med-low temp for 15 mins

Step 2

  • raise temperature med-high add ground beef and sausage, cook till brown

Step 3

  • add oregano and black pepper, cook for 3 mins
  • add white wine, cook for 5 mins
  • add tomato paste, cook till brick red, about 5 mins

Step 4

  • add cream, whole tomatoes, and whole tomatoes (hand crushed)
  • stew for at least 1 hour 30 mins
