Chuletas Guisada (Braised Pork Chops)

Chuletas Guisada

Be sure to sear the pork chops, just till you get a golden brown color on them.  Don't lick your fingers yet; you'll be doing that latter. 

The poblano peppers, I would love to try this with red ones, but they aren't in any local markets near me.  I've tried growing them, that didn't work out.  I'm using green ones right now. 

And, back to the fish sauce, use it, don't be scared. Hopefully, you've tried some of the other recipes on this site, and you now believe me.

Chuletas Guisada - Stewed Pork chops. I dont think this is a traditional Chuletas Guisada... but it is very teasty !

Ingredients

  • 4 lbs pork chops thin cut
  • Lawry's season salt
  • 2 each white onions sliced
  • 3 each poblano peppers seeded,and sliced
  • 4 cloves garlic sliced
  • 8 each roma tomatos sliced and de-seeded (meat only)
  • 6 oz white wine dry
  • 1 tablespoon Minors Chicken Stock
  • 4 cups water
  • ¼ cup lime juice fresh is always better
  • 2 teaspoon fish sauce I know, I use it in everything
  • 1 teaspoon cumin I may have used 2, I'm not sure

Instructions

Pan sear pork chops

  • Season pork chops on both sides with Lawrys season salt
  • Sear over high heat to brown the chops, not cook them. 3 mins each side Do this in batches.
  • Remove the chops, and place in sheet pan

Broil Onions and Peppers

  • Place Sliced onions and pepers on sheet pan, mix a little olive oil and roast till slitely chared 7 to 10 mins

Broth to stew in

  • In the same pan you seared the chops in, add the peppers, onions and gralic. Sutea and break up any all the bit on the bottome of the pan from the pork chops. Sautefor 5 mins.
  • Add the white wine, contiue to cook till reduced by half. Depending on heat setting (can be high) about 5 mins.
  • Add chiken base, lime juice, water, cumin and fish sause. Bring to simmer. and then poor over the portk chops.
