Chuletas Guisada - Stewed Pork chops. I dont think this is a traditional Chuletas Guisada... but it is very teasty !

Ingredients
4lbspork chopsthin cut
Lawry's season salt
2eachwhite onionssliced
3eachpoblano peppersseeded,and sliced
4clovesgarlicsliced
8eachroma tomatossliced and de-seeded (meat only)
6ozwhite winedry
1tablespoonMinors Chicken Stock
4cupswater
¼cuplime juicefresh is always better
2teaspoonfish sauceI know, I use it in everything
1teaspooncuminI may have used 2, I'm not sure
Instructions
Pan sear pork chops
Season pork chops on both sides with Lawrys season salt
Sear over high heat to brown the chops, not cook them. 3 mins each side Do this in batches.
Remove the chops, and place in sheet pan
Broil Onions and Peppers
Place Sliced onions and pepers on sheet pan, mix a little olive oil and roast till slitely chared 7 to 10 mins
Broth to stew in
In the same pan you seared the chops in, add the peppers, onions and gralic. Sutea and break up any all the bit on the bottome of the pan from the pork chops. Sautefor 5 mins.
Add the white wine, contiue to cook till reduced by half. Depending on heat setting (can be high) about 5 mins.
Add chiken base, lime juice, water, cumin and fish sause. Bring to simmer. and then poor over the portk chops.
