
Fresh (almost, its from canned beans) Hummus is so much better than most of the stuff you can get from the store. I say almost because I'be been surprised before and gotten really good hummus from a few stores.
One question I get, is people can find Garbanzo beans. They are the same as Chickpeas. You can read this on Wikipedia here.
There are two key things in this recipe. The first is boiling the been with backing soda before you process them. I'm sure there is a scientific reason the baking soda works, but it does. And the second is the cooking the beans. Just just like hot potato's when you mash them, hot beans will give you a smooth consistency.
This goes great with Pita Bread.
Hummus (from a can)
I usually make this recipe, though making it from dried beans is better. The process is the same after they are soaked.

Ingredients
- 15.5 oz Garbanzo Beans 1 Can (Chickpeas are the same)
- 2 each Garlic cloves
- 1 teaspoon baking soda
- ¼ cup tahini
- 2 teaspoon garlic powder
- ½ teaspoon salt more as needed
- ¼ cup lemon juice
Instructions
- Drain and rinse the Garbanzo, add garlic, baking soda, and enough water to cover by a half-inch. Simmer till soft. About 20 to 30 minutes.
- Drain and rinse Garbanzo beans and garlic.
- Blend in a food processor for 3 mins, stopping twice to scrape down the sides.
- Add the rest of the ingredients, except water. process for 7 minutes.
- While still running, add 3 to 3 tablespoon of cold water.
Notes
Sometimes I'll add ¼ to ½ teaspoon of ground cumin
