The easiest pita bread recipe you will find, that shouldn't be this easy. The only hard part is the waiting time while they rise, and trying to wait for them to cool down before you eat them. So once you finally make this easy pita bread, you'll think twice before you buy it again.
I've been ask about using whole wheat in the recipe, while it dose add a little more flavor, I find them a little tougher. I have used a mixture, I replace about 25% of the flour with whole wheat flour and it work.
This goes great with our Hummus recipe.

Ingredients
- 2 teaspoon active yeast
- 1 cup water warm
- ½ teaspoon sugar
- 2 ¾ cup flour
- 1 teaspoon kosher salt
- 2 tablespoon olive oil
Instructions
- Combine the ¼ cup flour, yeast, and warm water. Mix, and let it rest for 10 mins. You should see bubbling.
- Add the remaining ingredients and mix on low for 4 mins in a mixer using the dough hook.
- Remove from mixer and knead until smooth.
- Proof dough until it doubled in size. Depending on the temperature, this should be between 1 and 2 hours.
- Punch dough down, roll it into a smooth ball again, let it rise again till doubled in size. This should be a little quicker than last time. 45 mins to an hour and a half.
- Heat oven to 475F, with a cast iron pan, pizza stone/steel
- Remove the dough ball and shape it into a log.
- divide into 8 equally sized pieces and roll in to balls, cover and let rise for 10 minutes.
- Remove 1 ball at a time, roll into and 8-inch, about ⅛th inch thick.
- lay dough circle on the heated surface for two min, turn for 1 min and then remove.
- repeat with the rest of the dough balls.
