Ingredients
2teaspoonactive yeast
1cupwaterwarm
½teaspoonsugar
2 ¾cupflour
1teaspoonkosher salt
2tablespoonolive oil
Instructions
Combine the ¼ cup flour, yeast, and warm water. Mix, and let it rest for 10 mins. You should see bubbling.
Add the remaining ingredients and mix on low for 4 mins in a mixer using the dough hook.
Remove from mixer and knead until smooth.
Proof dough until it doubled in size. Depending on the temperature, this should be between 1 and 2 hours.
Punch dough down, roll it into a smooth ball again, let it rise again till doubled in size. This should be a little quicker than last time. 45 mins to an hour and a half.
Heat oven to 475F, with a cast iron pan, pizza stone/steel
Remove the dough ball and shape it into a log.
divide into 8 equally sized pieces and roll in to balls, cover and let rise for 10 minutes.
Remove 1 ball at a time, roll into and 8-inch, about ⅛th inch thick.
lay dough circle on the heated surface for two min, turn for 1 min and then remove.
