This Gryo recipe is great, I'm not going to say it's better than what I get at some restaurants that cook on a pit... but I can say it's better than some restaurants and every truck I've ever had. With the added benefit, I can make it at home.

This Gryo meat recipe is much better than the street guys, not as good as the restarunts with the pit... but its pretty good.

Ingredients
- 1 each onion medium, quartered (I use yellow onions))
- 1 pound ground lamb
- 1 pound ground beef
- 4 each garlic cloves
- 2 teaspoons salt
- 1 teaspoon dried oregano
- 1 teaspoon cumin powder
- ½ teaspoon ground black pepper
Instructions
- Preheat oven to 325 degrees Fahrenheit, 163 degrees Celsius.
- smash garlic to make a paste, if you have a morter it works best, but a food processer will be suficent
- Add onion with the garlic and puree until smooth.
- Add ground meat with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses.
- Place the mixture in a loaf pan. Compact it as much as possible.
- place loaf pan in a water bath
- Bake for 45 minutes to 1 hour.
