Instructions
Prepare the filling: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Sauté the vegetables: Add the cabbage, carrots, green onions, garlic, and ginger to the skillet. Cook, stirring frequently, until the vegetables are softened, about 5 minutes.
Season the filling: Stir in the soy sauce, oyster sauce (if using), sesame oil, and black pepper. Cook for another minute to allow the flavors to meld. Remove from heat and let the filling cool completely.
Assemble the egg rolls:
Prep the wrappers: Lay an egg roll wrapper on a clean, flat surface with one corner pointing towards you (like a diamond).
Add the filling: Place about 2-3 tablespoons of the cooled filling in the center of the wrapper.
Fold and seal: Fold the bottom corner of the wrapper over the filling. Then, fold the side corners in towards the center, overlapping them. Brush the top corner with the beaten egg (egg wash) and roll tightly to seal. Repeat with the remaining wrappers and filling.
Fry the egg rolls:
Heat the oil: Heat about 1 inch of oil in a large skillet or deep fryer to 350°F (175°C).
Fry in batches: Carefully add the egg rolls to the hot oil, a few at a time, making sure not to overcrowd the pan. Fry, turning occasionally, until golden brown and crispy, about 3-5 minutes.

Additional tips:For extra crispy egg rolls, double-fry them. After the egg rolls have cooled slightly, fry them again for an additional minute or two.
