My favorite fish tacos, blackened Mahi Mahi with a mango salsa

Ingredients
4ozMahi Mahi
1teaspoonBlackening seasoning
1eachmango¼" dice
1 eachonion, red¼" dice
1bucnhcilentrodiced
½tablespoonbutter
1oz olive oil
2tablespoonsour cream
1eachlime
2eachtortillas
Instructions
Dice and mix, red onions, mago and cilantro.
Pat dry the mahi-mahi with a paper towel. season with blackening seasoning. If you cant find blackening seasoning, just add a little sugar to a cajun blend it will be fine
Add butter and olive oil to a pan, when melted add seasoned mahi-mahi. Sear till there is a good color, then flip. Should be about 3 to 4 min each side. Depending on the thickness of the mahi-mahi, you may need to finish them in the oven at 350 for 5 mins.
Dice cilantro and mix with sour cream and juice of ½ lime (lime zest too if your zesty)
When fish is done, clean the same pan and toast your tortillas (for fish, I prefer flour but most people use corn)

Notes
There are tons of ways to make this recipe your own.
Try marinating the mahi-mahi in lime juice for 5 or 10 min before you sear it. I still would pat it dry, and add the blackening seasoning if it were me.
Add red cabbage, it works great with fish tacos
Add thinly sliced radishes
Add and English cucumber to the mango salsa, peeled and de-seeded
