Ingredients
1eachEuropean cucumber
3eachgarlic clovemashed to a paste
2tablespoonmintfinely chopped
1teaspoonblack pepper
2tablespoonolive oilextra virgin
2tablespoonred wine vinegar
1.5cupsgreek yogurtplain
Instructions
Peel and chop cucumber to ¼ dice. Place in a colander and add a generous about of kosher salt. Let sit for 15 mins, rinse and squeeze out as much of the water as possible.
Mix the cucumber and the rest of the ingredients, add salt as needed.
Notes
This comes together quick and easy, and far surpasses anything you can buy in the store. I've seen some people subsiture dill for the mint, and add replace half of the yogert with sour cream. I've tried it, and like it every way, but this is my favorite. I do add 2 tablespoon of Red Wine vinegar to it most of the time.
